Blueberry Oatmeal Muffins with Pecan Streusel

These Blueberry Oatmeal Muffins are a delightful combination of juicy blueberries and crunchy pecan streusel. Perfect for a quick breakfast or a tasty snack!

Ingredients:

  • 1 cup rolled oats

  • 1 cup all-purpose flour

  • 1/2 cup brown sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, melted

  • 1/2 cup buttermilk

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup fresh blueberries

  • 1/2 cup chopped pecans

Instructions:

Preheat your oven to 350F 175C


Line a muffin tin with paper liners


In a bowl, mix together oats, flour, brown sugar, baking powder, baking soda, and salt


In another bowl, whisk together melted butter, buttermilk, egg, and vanilla extract


Combine the wet and dry ingredients, stirring until just mixed


Gently fold in the blueberries and chopped pecans


Divide the batter evenly among the muffin cups


For the streusel topping, combine 1/4 cup oats, 2 tbsp brown sugar, and 2 tbsp chopped pecans


Sprinkle the streusel mixture over the muffin batter in each cup


Bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean


Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely
